*Recipe* ~Cupcake Batter~ -1 cup flour -1/2 teaspoon baking powder -1/2 teaspoon soda -1/4 teaspoon salt -1/2 cup butter -1 1/4 cup sugar -2 eggs -1 teaspoon vanilla -1/2 cup sour cream ~Icing~ -1 3/4 cup sugar -3 egg whites -1/4 teaspoon cream of tartar -1 tea vanilla ~Coating~ -2 cups semi-sweet chocolate chips -3 tablespoons vegetable oil
~Directions~ -Preheat oven to 350 degrees and line cupcake pan with paper. -Mix dry ingredients on a small bowl. -In a larger, seperate bowl cream sugar and butter until fluffy. -Then add eggs, one at a time, into sugar/butter mixture along with the vanilla. -Add half of the flour mixture then 1/2 cup of water. *not mentioned above in recipe* Then add remaining dry mix. -Fill paper cups 1/3 of the way and place in the oven for 20 minutes. *To check for doness, stick the cakes with toothpick; if it comes out clean it's done* -Let cool before making the icing; heat a saucepan with water over a low heat. Let simmer. -Add sugar, 1/4 cup of water *not noted above*, egg whites, & tartar in heat safe bowl. -With an mixer, beat mix until foamy. Then place the bowl with foamy mix over the simmering water. *DO NOT LET THE SIMMERING WATER TOUCH BOTTOM OF BOWL* -Beat for 20 minutes until stiff peaks form. After peaks form, throw in vanilla and beat for another 2 minutes. -Place icing in plastic bag and pipe icing on to cakes. Let set up. -Melt chocolate and oil in a saucepan over LOW heat. Then dip cakes into the chocolate and let set in fridge. =====
